Company Profile:
UniDEA is located in the Campus of Ciudad Real of the University of Castilla-La Mancha (UCLM).
This unit is devoted to products and processes improvement through R&D and innovation activities based on a Food Science and Technology multidisciplinary approach: food quality and properties, food chemistry, food microbiology and biotechnology, food sensory characteristics, food safety and shelf-life, and healthy nutrition.
The areas of expertise of the different research groups that belongs to UnIDEA are related to the main food industries of our region: enology, meat products, dairy products, fermented vegetables and olive oil.

UCLM - UniDEA - YEAST BIOTECHNOLOGY Research Group

What we offer:
Yeast biotechnology research group is interested in the study of microbiota and biotechnology properties of special interest in different ecosystems: wine, oil and distillery environment. There are different research lines; some of the most important ones are the selection of wild yeasts for using as starter cultures in Enology, study of phenotypic characteristics and dynamic population during fermentation process, use of by-products in solid phase fermentation or stabilization of enzymes by inmobilization techniques

What we offer:
Areas of expertise of Virgin Vegetable Oils research group are related to the chemical composition, sensory profile, stability and quality of virgin vegetable oils, mainly extra virgin olive oil. Our group is interested in the study of natural minor components related to nutritional or organoleptic properties, technological variables of manufacturing processes involved in food quality and properties and in the development of novel food products based on virgin vegetable oils.

What we offer:
Dairy Products and Lactic Acid Bacteria research group areas of expertise are:

•Proteolysis, lipolysis and production of volatile compounds in cheese during ripening
•Sensory analysis of cheese and other dairy products
•Genetic and technological characterization of the microbiota present in food ecosystems.
•Monitoring of the fermentation processes using molecular techniques
•Study of the population dynamics during fermentation using independent-culture techniques as DGGE

What we offer:
Areas of expertise of our research group are related to the chemical composition, sensory profile and quality of different food products, such as grapes, wines, fruits and vegetables, spices and honeys. We are interested in:
- The study of the effect of new winemaking technologies on the quality of final wine, using experimental wine-making.
- The ageing of wines and the chemical composition of oak wood and other alternative woods.
